Because the sugar in yacon is mostly FOS, it is low in calories and is a good sweetener for use by dieters and diabetics.
Yacon also helps the body increase its vitamin and mineral absorption of all other foods, while itself being rich in antioxidants, potassium, calcium, and phosphorous.
Known health benefits of Yacon include the reduction of blood sugar levels, blood pressure, cholesterol, aiding in digestion, enhancing absorption of calcium and magnesium, improved elimination of toxins and sources say it may reduce the risk of colon cancer.
